Main Ingredients

  • 1 cup black beans, rinsed and drained
  • 2 large eggs
  • 1/2 cup peanut butter or almond butter Can substitute different nut butters for varied flavor.
  • 1/4 cup honey or maple syrup Use a sweetener of your choice.
  • 1/4 cup cocoa powder Unsweetened cocoa powder is preferred.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup dark chocolate chips (optional) Can be substituted with white chocolate or peanut butter chips.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C) and grease a 9×9 inch baking dish.
  • In a blender or food processor, combine the black beans, eggs, peanut butter, honey, cocoa powder, vanilla extract, baking powder, baking soda, and salt. Blend until smooth.
  • Stir in the dark chocolate chips if using.
  • Pour the batter into the prepared baking dish and spread it evenly.

Baking

  • Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
  • Let cool before cutting into squares and enjoy!

Notes

Serve warm with ice cream or whipped cream. Store leftovers in an airtight container for up to three days at room temperature or refrigerate for up to a week. For extended storage, freeze them for up to three months. Options to make it vegan include replacing eggs with ground flaxseeds or applesauce.
