  • 8 cloves garlic finely grated
  • 2 tablespoons raw apple cider vinegar with the 'mother'
  • 1 tablespoon fresh ginger peeled and grated
  • 1 tablespoon fresh horseradish root peeled and grated
  • 1 teaspoon ground turmeric
  • Juice of 1 large lemon juice about 2 tablespoons
  • ½ lemon zest optional, for extra brightness
  • 1 scallion thinly sliced for garnish

Instructions

Preparation

  • In a medium bowl, combine the grated garlic, ginger, and horseradish. Add the turmeric, apple cider vinegar, oil, and salt. Stir until a fragrant paste forms. Set aside.

Cooking the Broth

  • Pour 8 cups of water into a large pot and bring it to a gentle boil over medium-high heat. Once steaming, lower the heat to maintain a simmer.
  • In a small bowl, whisk ½ cup of hot water with the miso paste until smooth and lump-free. Stir the miso mixture into the bowl with your flavor base until everything is well combined.

Finishing Touches

  • Turn off the heat under the pot of hot water. Slowly pour the miso mixture into the hot water while whisking continuously. Add the fresh lemon juice and optional zest, stirring until fully incorporated. Avoid boiling after adding miso and lemon to preserve their delicate nutrients and probiotics.
  • Ladle the golden broth into mugs or bowls. Garnish with sliced scallions or a light sprinkle of turmeric for color. Serve immediately while warm.

Notes

Store any leftover broth in an airtight container in the refrigerator for up to four days. To reheat, warm it gently on the stove, avoiding boiling. You can also freeze the broth for up to three months; just remember to leave some space in the container for expansion.
