Ground Turkey Rice Bowls with Bang Bang Sauce

Ingredients

For the Bang Bang Sauce

  • ½ cup mayonnaise
  • 3 Tbsp sweet chili sauce
  • ½-1 Tbsp sriracha add more for heat
  • 1 tsp rice vinegar
  • 2 tsp honey

For the Ground Turkey Mixture

  • 1 lb ground turkey
  • 1 Tbsp sesame oil or your favorite cooking oil
  • 2-3 cloves garlic minced
  • 2 tsp grated ginger
  • ½ tsp smoked paprika
  • ½ tsp onion powder
  • 3 Tbsp soy sauce low sodium
  • 1-2 Tbsp sriracha
  • 2-3 Tbsp chicken broth
  • 2 tsp honey
  • ½ tsp black pepper
  • ½ tsp sea salt more or less to taste
  • 2 tsp corn starch

For Assembly

  • Rice of your choice
  • Shredded carrots
  • Sliced cucumbers
  • Shelled edamame
  • Pickled onions
  • Avocado
  • Shredded cabbage
  • Sliced green onion
  • Sesame seeds and more!

Instructions

Preparation of Bang Bang Sauce

  • In a small bowl, add all the Bang Bang Sauce ingredients. Whisk well to mix. Adjust the flavors by adding more sriracha for spice or more honey for sweetness. Chill until it’s time to serve.

Preparation of Ground Turkey Mixture

  • Heat a splash of sesame oil in a large skillet over medium-high heat. Once it’s glistening, add the ground turkey, breaking it into smaller pieces.
  • Cook until the turkey is browned and reaches an internal temperature of 165°F (check the USDA food safety temperature guidelines).
  • Reduce the heat to medium-low and mix in the remaining ingredients, except for the cornstarch.

Simmer and Thicken

  • Allow the mixture to simmer for 2-3 minutes while stirring occasionally.
  • Sprinkle the cornstarch on top and stir to incorporate it into the mixture.
  • Just before serving, feel free to mix in a couple of tablespoons of the Bang Bang Sauce into the meat for extra flavor, although this step is optional.

Assembly of Rice Bowls

  • Layer your rice, veggies, and any of your favorite ingredients in a bowl.
  • Spoon the ground turkey mixture on top and drizzle with more Bang Bang Sauce.
  • Finish by garnishing with sliced green onions and sesame seeds.

Notes

Store any leftovers in an airtight container in the refrigerator for up to 3-4 days. For best results, store the Bang Bang Sauce separately to keep the freshness of the veggies intact. Use leftover rice for convenience. Feel free to swap vegetables depending on what you have on hand. Experiment with different sauces to change the flavor profile.
