  • 6 pieces Hardboiled Eggs Peeled and halved
  • 1 small-medium Avocado Use ripe for creaminess
  • 2 Tbsp Mayo
  • 1 Tbsp Lime Juice Adjust to taste
  • to taste pinch Salt
  • Sliced pieces Deli Meat Ham Cut and rolled
  • a few drops Green Food Coloring Use to achieve desired color
  • as needed Toothpicks For securing ham

Instructions

Preparation

  • Start by peeling and halving the hardboiled eggs. Carefully scoop out the yolks and place them in a medium-sized bowl.
  • To the yolks, add mayo, lime juice, salt, avocado, and a drop or two of green food coloring. Mix and mash until you achieve a smooth consistency.
  • Use a spoon or piping bag to fill the white halves of the eggs with the green yolk mixture.
  • Cut the slices of ham in half. Roll each piece and secure it with a toothpick.
  • Position the rolled ham on top of the filled egg halves, inserting the toothpick into the egg to hold it.
  • Your creative green eggs and ham treat is ready to serve! It’s bound to add flair to any Dr. Seuss celebration.

Notes

Store any leftovers in an airtight container in the fridge. They taste best within one to two days. To keep the eggs fresh, consider placing a paper towel in the container to absorb moisture.
