Ingredients

For the Chicken and Marinade

  • 4 pieces Chicken breast Skinless and boneless
  • 2 tablespoons Olive oil For marinating
  • 3 cloves Garlic Minced
  • 1 tablespoon Lemon juice Freshly squeezed
  • 1 teaspoon Salt More to taste
  • 1 teaspoon Pepper More to taste

For the Bowl Assembly

  • 1 cup Cucumber Chopped
  • 1 cup Tomato Chopped
  • 1/2 cup Red onion Sliced
  • 1 cup Bell pepper Chopped
  • 1/2 cup Feta cheese Crumble over bowls
  • 1 cup Tzatziki sauce Store-bought or homemade

Instructions

Preparation

  • Marinate the chicken in olive oil, minced garlic, lemon juice, salt, and pepper for at least 30 minutes.
  • Prepare the tzatziki sauce by mixing yogurt, grated cucumber, minced garlic, chopped dill, and lemon juice.

Cooking

  • Grill or pan-cook the chicken until fully cooked, then slice.

Assembly

  • Chop fresh veggies and assemble bowls with chicken, veggies, feta cheese, and tzatziki sauce.
  • Serve fresh and enjoy!

Notes

Make sure to keep the tzatziki sauce separate from the rest of the ingredients if storing leftovers to maintain freshness. You can customize with other toppings like olives or avocado.
