Instructions

Preparation

  • Preheat your oven to 350°F (175°C). Grease a 9×13-inch baking pan or line it with parchment paper for easy removal.
  • In a large bowl, whisk together the all-purpose flour, cocoa powder, and salt until well combined. Set aside.
  • In a saucepan over low heat, melt the cubed butter together with the semisweet and white chocolate chips, stirring frequently until smooth. Remove from heat and let cool slightly.
  • In a separate bowl, whisk together the cooled chocolate mixture with the granulated sugar, brown sugar, and eggs until smooth. Stir in vanilla extract and root beer (along with optional root beer extract).
  • Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.

Baking

  • Pour the brownie batter into the prepared baking pan and spread it evenly.
  • Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out with moist crumbs.

Frosting

  • While the brownies cool, prepare the frosting. In a medium bowl, mix the powdered sugar and reduced root beer until smooth and creamy. Adjust the consistency with additional powdered sugar if needed.

Notes

Store the brownies in an airtight container at room temperature for up to four days. For extended freshness, place them in the refrigerator where they can last up to a week. If you want to freeze them, wrap individual squares in plastic wrap and then seal them in a freezer bag for up to three months. Thaw them at room temperature before serving. Don’t overbake to keep the brownies gooey.
