Gluten-Free S'mores Bars

Warm, gooey, and sweet, these Gluten-Free S'mores Bars deliver all the campfire flavor without the need for a bonfire, making them perfect for gatherings or as an everyday treat.

Ingredients

Base Ingredients

  • 1/2 cup Butter, softened Use unsalted butter.
  • 3/4 cup Brown sugar
  • 1 large Egg, room temperature
  • 1 teaspoon Vanilla extract
  • 1 cup Gluten-free measure-for-measure flour A high-quality blend is recommended.
  • 1 cup Gluten-free graham cracker crumbs Ensure gluten-free for safety.
  • 1/2 teaspoon Baking powder
  • 1/4 teaspoon Kosher salt

Toppings

  • 1 (7 oz.) container Marshmallow fluff or marshmallow creme Do not substitute with regular marshmallows.
  • 1 cup Semi-sweet chocolate chips or chopped chocolate bars

Instructions

Preparation

  • Start by preheating the oven to 350 degrees F. Line an 8x8 metal pan with parchment paper or foil.
  • In a large mixing bowl, combine softened butter and brown sugar. Cream for 2-3 minutes until smooth and fluffy.
  • Add the egg and vanilla extract to the butter/sugar mixture, mixing until fully combined.
  • Scrape down the bowl and add gluten-free flour, graham cracker crumbs, baking powder, and salt. Mix until just combined.
  • Take roughly 2/3 of the graham cracker dough and spread it evenly into the prepared pan.
  • Layer the marshmallow fluff over the cookie dough, spreading it evenly.
  • Sprinkle the chocolate chips or chopped chocolate evenly over the marshmallow layer.
  • With the remaining 1/3 of the graham cracker dough, take small dollops, pat them out, and spread these over the marshmallows and chocolate.

Baking

  • Bake for 25-30 minutes, or until the top is just set and starting to turn golden.
  • Let the s’mores bars cool completely before slicing into bars.

Notes

Better served at room temperature. For cleaner cuts, refrigerate the bars before slicing. Storage: Airtight container at room temperature for 2-3 days, refrigeration for longer freshness.
