3/4cupBrown sugar
1largeEgg, room temperature

1(7 oz.) containerMarshmallow fluff or marshmallow cremeDo not substitute with regular marshmallows.
1cupSemi-sweet chocolate chips or chopped chocolate bars
Instructions
Preparation
Start by preheating the oven to 350 degrees F. Line an 8x8 metal pan with parchment paper or foil.
In a large mixing bowl, combine softened butter and brown sugar. Cream for 2-3 minutes until smooth and fluffy.
Add the egg and vanilla extract to the butter/sugar mixture, mixing until fully combined.
Scrape down the bowl and add gluten-free flour, graham cracker crumbs, baking powder, and salt. Mix until just combined.
Take roughly 2/3 of the graham cracker dough and spread it evenly into the prepared pan.
Layer the marshmallow fluff over the cookie dough, spreading it evenly.
Sprinkle the chocolate chips or chopped chocolate evenly over the marshmallow layer.
With the remaining 1/3 of the graham cracker dough, take small dollops, pat them out, and spread these over the marshmallows and chocolate.
Baking
Bake for 25-30 minutes, or until the top is just set and starting to turn golden.
Let the s’mores bars cool completely before slicing into bars.
Notes
Better served at room temperature. For cleaner cuts, refrigerate the bars before slicing. Storage: Airtight container at room temperature for 2-3 days, refrigeration for longer freshness.
