Ingredients

For the cake

  • 1 box Pillsbury Gluten-Free Yellow Cake Mix You can use any gluten-free cake mix.
  • 1/2 cup butter, melted Make sure it's fully melted before mixing.
  • 2 large eggs Room temperature for better mixing.

For the cream cheese topping

  • 1 block (8 oz) cream cheese, softened Allow to soften at room temperature.
  • 2 large eggs Room temperature is preferred.
  • 4 cups powdered sugar Sift if clumpy for a smoother mix.
  • 1 teaspoon vanilla extract For flavor, consider substituting with almond extract as well.

Instructions

Preparation

  • Preheat your oven to 350ºF (175ºC).
  • Lightly grease a 9x13 inch baking dish and set it aside.
  • In a large bowl, mix the cake mix, melted butter, and 2 eggs until fully combined.
  • In another bowl, blend the cream cheese, 2 eggs, powdered sugar, and vanilla until smooth.
  • Press the cake mix mixture into the prepared baking dish.
  • Pour the cream cheese mixture on top and spread it evenly.

Baking

  • Bake in the center of the oven for 35-40 minutes, until the cake no longer jiggles.
  • Remove from the oven and allow to cool.

Serving

  • Once cool, cut into squares and serve.
  • Serve at room temperature or slightly chilled, optionally paired with fresh berries or whipped cream.

Notes

For a festive touch, decorate with a dusting of powdered sugar before serving. Store leftovers in an airtight container in the refrigerator for up to a week. Freeze for up to three months if needed.
