Instructions

Preparation

  • In a large pot, heat the olive oil over medium heat. Add the onion and garlic, sauté until the onion turns translucent.
  • Stir in the chopped cabbage and cook for about 5 minutes.
  • Pour in the vegetable broth and mix in the thyme, oregano, salt, and pepper.
  • Bring the mixture to a boil, then lower the heat to simmer for 20-25 minutes until the cabbage is tender.
  • Taste the soup and adjust the seasoning if necessary.

Notes

For a spicier kick, add red pepper flakes or a splash of hot sauce. Adjust ingredients according to taste preferences; carrots or celery can be added for extra flavor. For a creamier version, blend some of the soup for a thicker texture. Great for meal prep and can be frozen.
