  • 1.5 lbs baby potatoes, halved
  • 1/2 cup grated parmesan cheese
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup olive oil
  • 1/4 cup chopped fresh parsley For garnish

Preparation

  • Place chicken breasts and baby potatoes in the crockpot.
  • In a bowl, mix together parmesan cheese, minced garlic, oregano, basil, salt, pepper, and olive oil until well combined.
  • Pour the mixture evenly over the chicken and potatoes in the crockpot.
  • Cover and cook on low for 6 hours, or high for 3 hours, until the chicken is cooked through.
  • Right before serving, sprinkle with fresh parsley for added flavor and color.

Notes

For extra flavor, marinate the chicken in some olive oil and garlic mixture for a few hours before cooking. Use fresh herbs if available, and adjust seasoning to your preference. You can also add vegetables like carrots or green beans to the crockpot.
