Ingredients

For the Bread

  • 3 cups all-purpose flour
  • 1.5 teaspoons salt
  • 0.5 teaspoon instant yeast
  • 1.5 cups warm water Ensure water is warm but not hot.
  • 4 cloves garlic, minced
  • 2 tablespoons fresh herbs (rosemary and thyme), chopped Feel free to substitute herbs.
  • 1 tablespoon olive oil For greasing the Dutch oven.

Instructions

Preparation

  • In a large bowl, mix together the flour, salt, and instant yeast.
  • Add the warm water, minced garlic, and chopped herbs to the dry ingredients and stir until combined.
  • Cover the bowl with plastic wrap and let it rest for 12-18 hours at room temperature.

Baking

  • After resting, preheat your oven to 450°F (230°C) and place a Dutch oven inside to heat up.
  • Once the oven is hot, carefully remove the Dutch oven and add olive oil to the bottom.
  • Transfer the dough onto a floured surface and shape it into a ball.
  • Place the dough into the hot Dutch oven, cover it, and bake for 30 minutes.
  • Remove the lid and bake for an additional 15-20 minutes until golden brown.
  • Let the bread cool on a wire rack before slicing.

Notes

Store leftover bread in an airtight container at room temperature for up to three days. For longer storage, slice and freeze the bread; thaw as needed.
