Ingredients

For the Garlic Herb Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary

  • 4 large russet potatoes, peeled and chopped
  • 1/2 cup heavy cream
  • 4 tablespoons butter

For the Glazed Carrots

  • 4 cups baby carrots
  • 2 tablespoons brown sugar
  • 1 tablespoon butter for carrots
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • In a large bowl, mix olive oil, minced garlic, thyme, rosemary, salt, and pepper. Add the chicken breasts and coat them well with the mixture.
  • Place the seasoned chicken in a baking dish and bake for 20-25 minutes or until cooked through and no longer pink in the center.
  • While the chicken is baking, boil the chopped potatoes in salted water until tender, about 15-20 minutes.

Cooking

  • Drain the potatoes and add heavy cream and butter. Mash until creamy and smooth, then season with salt and pepper to taste.
  • In a separate pot, add baby carrots and enough water to cover them. Boil until tender, about 5 minutes. Drain the carrots and return them to the pot.
  • Add brown sugar and butter to the carrots, tossing them until coated and heated through.
  • Serve the garlic herb chicken alongside the creamy mashed potatoes and glazed carrots. Garnish the dish with fresh parsley for an appealing presentation.

Notes

For the chicken, let it marinate in the olive oil and herb mixture for at least 30 minutes before baking to enhance the flavor. Use a potato masher or a ricer for creamier mashed potatoes. Avoid over-mashing, as this can create a gummy texture. Experiment with other fresh herbs like basil or oregano for a different flavor profile.
