Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning
  • 4 cups chopped green cabbage
  • 1 cup diced tomatoes
  • 1 cup canned black beans, drained and rinsed
  • 1 cup canned sweet corn, drained
  • 2 cups Fritos corn chips
  • 1.5 cups shredded cheddar cheese
  • 0.5 cup ranch dressing or Southwest-style dressing

Instructions

Preparation

  • In a skillet over medium heat, cook the ground beef until browned. Drain excess fat.
  • Add taco seasoning and a splash of water. Stir and simmer for 2–3 minutes.
  • While the beef is cooking, chop the cabbage and dice the tomatoes. Drain corn and black beans.

Assembly

  • In a large serving bowl or casserole dish, layer cabbage, beef, beans, corn, and tomatoes. Toss gently.
  • Top the mixture with Fritos and sprinkle with shredded cheddar cheese.
  • Drizzle with dressing just before serving and toss lightly if desired.

Notes

Serve warm and offer additional toppings like sliced avocados, jalapeños, or extra ranch dressing for customization. For storage, keep leftovers in an airtight container for up to three days and reheat before serving, maintaining the crunch of the Fritos.
