  • 1 tablespoon olive oil

Instructions

Preparation

  • In a small saucepan, combine pomegranate juice, honey, and balsamic vinegar. Bring to a simmer and reduce until thickened.
  • Season the lamb chops with salt and pepper. In a skillet, heat olive oil over medium-high heat.
  • Add lamb chops and cook for about 3-4 minutes on each side, or until desired doneness.
  • Brush the reduced pomegranate sauce over the chops during the last minute of cooking.
  • Serve the lamb chops with extra sauce drizzled on top and garnish with pomegranate seeds and fresh herbs.

Notes

Allow leftovers to cool completely before storing. Store in airtight containers in the refrigerator for up to three days. Reheat in the oven at low temperature.
