  • 2 cups bell peppers, chopped Any color bell pepper will work.
  • 1 can diced tomatoes Ensure they are gluten-free if necessary.
  • 1 cup onion, chopped
  • 1 cup cheese, shredded Cheddar recommended, but can use any cheese.

Instructions

Preparation

  • In a large skillet, brown the Italian sausage over medium heat.
  • Add chopped onions and bell peppers; sauté until softened.
  • Stir in rice and diced tomatoes.
  • Cover and simmer until the rice is cooked through.
  • Top with shredded cheese, cover, and let it melt before serving.

Notes
