Easy Chicken Burrito Casserole

Ingredients

Main Ingredients

  • 2 cups cooked shredded chicken
  • 1 can black beans, rinsed and drained
  • 1 can corn, drained
  • 1 cup salsa
  • 1 teaspoon taco seasoning
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 4 large tortillas, cut into quarters

For Serving

  • to taste Sour cream For topping
  • to taste Chopped green onions For topping

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large bowl, combine the shredded chicken, black beans, corn, salsa, and taco seasoning.
  • In a greased 9x13 inch baking dish, spread a layer of the tortilla quarters.
  • Layer half of the chicken mixture over the tortillas, followed by half of the cheese.
  • Repeat the layers with the remaining tortillas, chicken mixture, and cheese.

Baking

  • Bake for 25-30 minutes or until the cheese is melted and bubbly.
  • Let it cool for a few minutes before serving. Top with sour cream and green onions.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. To reheat, place in the oven at 350°F (175°C) until warmed through. Can also be frozen for up to three months.
