Preparation
Rinse and slice one end of a cucumber at an angle.
Continue slicing at an angle, making the pieces look more oval than round and adjusting the thickness to your liking.
Place the slices in a bowl and sprinkle with 1/2 tsp of salt.
Mix well, then refrigerate for at least 20 minutes to draw out water.
After 20 minutes, drain the excess water and give the cucumbers a quick rinse for about 10 seconds before returning them to the bowl.
Add the sesame oil, light soy sauce, sugar, rice vinegar, chili oil, sesame seeds, and minced garlic, if using.
Stir until everything is well combined, and then serve. Enjoy!
Notes
Store leftovers in an airtight container in the refrigerator. Best consumed within a couple of days. Adjust sugar levels based on your preferred sweetness, and for added crunch, include sliced radishes or shredded carrots.
