  • 1 cup Tzatziki sauce Store-bought or homemade
  • 1 cup cherry tomatoes, halved
  • 1 cup zucchini, diced
  • 0.5 cup red onion, chopped
  • 0.5 cup feta cheese, crumbled
  • 2 tablespoons olive oil Plus extra for greasing
  • 1 teaspoon dried oregano

Instructions

Preparation

  • Preheat the oven to 400°F (200°C). Lightly grease a 9x13-inch baking dish with olive oil.
  • Add the chicken pieces, cherry tomatoes, zucchini, and red onion to the prepared baking dish.
  • Drizzle with olive oil, sprinkle with dried oregano, salt, and pepper. Toss everything to combine well.
  • Spoon the Tzatziki sauce evenly over the casserole mixture. Gently mix to coat.

Cooking

  • Bake uncovered for 30-35 minutes or until the chicken is cooked through and vegetables are tender.
  • Remove from the oven, sprinkle with crumbled feta cheese, and serve hot.

Notes

For extra crunch, consider adding pitted Kalamata olives or bell peppers. For a true Mediterranean flavor, substitute Greek yogurt for the Tzatziki sauce or make your own. This casserole is versatile; you can also use shrimp instead of chicken for a seafood twist.
