Instructions

Cooking the Ravioli

  • In a large pot of boiling salted water, cook the ravioli according to package instructions. Fresh ravioli typically cooks in about 3-4 minutes, while frozen may need a few extra minutes. Once cooked, drain and set aside.

Sautéing Vegetables

  • In a large skillet, heat the olive oil over medium heat.
  • Add the minced garlic and sauté for about 30 seconds until fragrant. Be careful not to burn the garlic.
  • Toss in the asparagus pieces and cook for 3-4 minutes until they begin to soften.
  • Add the diced tomatoes and sprinkle with dried basil, oregano, salt, and pepper. Stir gently, allowing the tomatoes to heat through and release their juices. Cook for another 2-3 minutes.

Combining Ingredients

  • Gently add the cooked ravioli to the skillet. Toss everything together, ensuring the ravioli is well-coated with the vegetable mixture.

Serving

  • Remove from heat and garnish with fresh basil leaves if desired.

Notes

For leftovers, let the ravioli cool completely before transferring to an airtight container. Store in the refrigerator for up to three days. Reheat gently with a splash of water or olive oil.
