Ingredients

Egg Mixture

  • 12 large Large eggs (hard-boiled and peeled)
  • 1/4 cup Mayonnaise
  • 1 tablespoon Dill pickle relish
  • 1 tablespoon Yellow mustard
  • Salt to taste Salt
  • Black pepper to taste Black pepper
  • Paprika to taste Paprika (for garnish)

Coating

  • 1/2 cup All-purpose flour
  • 2 large Large eggs (beaten)
  • 1 cup Panko breadcrumbs

For Frying

  • Vegetable oil (for frying) Ensure oil is hot enough for frying.

Instructions

Preparation

  • Heat oil in a deep fryer or large pot to 350°F (175°C).
  • Slice the hard-boiled eggs in half lengthwise and remove the yolks to a bowl. Set the egg whites aside.
  • Dredge each egg white in flour, then dip it into the beaten eggs, and coat with panko breadcrumbs.

Cooking

  • Fry the breaded egg whites in batches for about 2-3 minutes until golden brown. Drain on paper towels.

Filling

  • In the bowl with the egg yolks, mix in mayonnaise, relish, mustard, salt, and pepper until smooth.
  • Pipe or spoon the yolk mixture into the fried egg whites.
  • Sprinkle with paprika before serving.

Notes

To serve, arrange on a platter and pair with a dipping sauce like ranch or zesty hot sauce. Store leftovers in an airtight container in the refrigerator, separating the fried egg whites from the yolk mixture to maintain crispiness.
