  • 2 cups chopped broccoli Finely chopped for better shape retention
  • 1 cup shredded cheddar cheese Can substitute with mozzarella or dairy-free cheese
  • 1/2 cup almond flour Acts as a binding agent
  • 1 large egg Binds all ingredients together
  • 1/2 teaspoon garlic powder For added flavor
  • 1/2 teaspoon onion powder For added flavor
  • to taste salt and pepper Adjust according to preference
  • Olive oil For brushing the tops before baking

Instructions

Preparation

  • Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a mixing bowl, combine the chopped broccoli, cheddar cheese, almond flour, egg, garlic powder, onion powder, salt, and pepper. Mix until well combined.
  • Scoop out tablespoon-sized amounts of the mixture and form them into rounds. Place them on the prepared baking sheet.
  • Lightly brush the tops with olive oil.

Baking

  • Bake for 15-20 minutes or until golden brown and crispy.
  • Allow to cool slightly before serving. Enjoy your guilt-free snack!

Notes

Serve warm as a snack or side dish. Pairs well with salad or dips. Store leftovers in an airtight container for up to 3 days, reheat in the oven at 350°F (175°C) for about 10 minutes.
