  • 6-8 slices thick slices Brioche or Challah Use high-quality brioche or challah for optimal flavor.
  • 4 large eggs
  • 2 extra egg yolks
  • 1 cup heavy cream
  • 1/4 cup granulated sugar
  • 2 teaspoons pure vanilla extract
  • 1 pinch salt
  • 2 tablespoons unsalted butter
  • 1/4 cup granulated sugar (for caramelized topping)
  • 2 tablespoons turbinado sugar (optional) For an extra crunchy topping.

Instructions

Preparation

  • Cut the brioche or challah into thick, approximately 1-inch slices and lay them on a wire rack to allow for even drying.
  • In a shallow dish, whisk together the eggs, extra yolks, heavy cream, granulated sugar, vanilla extract, and salt until smooth.
  • Soak the bread slices in the custard mixture for at least 30 minutes, flipping halfway through. For best results, soak overnight in the refrigerator.

Cooking

  • Heat a pan over medium heat and add the unsalted butter. Cook the soaked bread slices for 3-4 minutes on each side until golden brown.
  • Once cooked, sprinkle granulated sugar on top of each French toast slice. Use a kitchen torch or place under the broiler for 1-2 minutes until the sugar caramelizes into a crisp topping.

Serving

  • Serve immediately while the caramelized topping is still warm and crackling.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in a preheated oven at 350°F (175°C) until warmed through. Optionally re-crisp the sugar topping using the broiler or a kitchen torch. Experiment with the sugar topping by adding a pinch of cinnamon or nutmeg to the sugar before caramelizing.
