Ingredients

Pasta and Base

  • 8 ounces pasta (spaghetti, fettuccine, or your choice)
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 cup vegetable broth
  • 1 cup coconut cream (or any plant-based cream) Substitute with any preferred plant-based cream.
  • 1 tablespoon soy sauce or tamari
  • 1 teaspoon nutritional yeast Optional.
  • Salt and pepper, to taste
  • Fresh herbs (such as parsley or basil) for garnish

Instructions

Preparation

  • Start by boiling water in a large pot. Add the pasta and cook according to package instructions until al dente. Drain and set aside.
  • In a large skillet, heat the olive oil over medium heat. Add the sliced onions and cook for about 15 minutes, stirring occasionally, until they become golden brown and caramelized.
  • Stir in the minced garlic and cook for an additional 1-2 minutes until fragrant.
  • Pour in the vegetable broth and bring to a simmer. Allow it to reduce slightly for about 3-5 minutes.
  • Stir in the coconut cream and soy sauce. Mix well, and let it cook for another 2-3 minutes until the sauce is heated through.
  • Add the cooked pasta to the skillet and toss it with the caramelized onion sauce. Ensure the pasta is well coated.
  • Taste and season with salt, pepper, and nutritional yeast if desired.
  • Remove from heat and garnish with fresh herbs before serving.

Notes

Adjust the sweetness by cooking the onions longer for a deeper flavor. Use whole grain pasta for a healthier option. Feel free to add your favorite vegetables, like spinach or mushrooms, for extra nutrition. Store leftovers in an airtight container in the refrigerator for up to 3 days.
