In a blender or food processor, combine the cottage cheese and cocoa powder. Blend until completely smooth. (Tip: Scrape down the sides with a spatula for a silky texture!)
Add honey/maple syrup, vanilla extract, and a pinch of salt. Blend again. Taste and adjust sweetness if needed.
For extra creaminess, add 1–2 tbsp milk. For a thicker mousse, blend in chia seeds and let rest for a few minutes before chilling.
Transfer to serving glasses or bowls, cover, and refrigerate for at least 30 minutes for the flavors to meld and texture to set.
Garnish with shaved chocolate, berries, or a dollop of whipped cream before serving.
Notes
Make it richer by adding 1 tbsp of nut butter for a deep, indulgent flavor. This mousse keeps well in the fridge for 2–3 days. Use protein powder for an extra protein-packed dessert!
