  • 1 lime (juiced and zested)
  • 1 onion (diced)
  • 2 cloves garlic (minced)
  • 1 bell pepper (sliced)
  • 1 carrot (sliced)
  • Salt and pepper to taste

Preparation

  • In a large pot, sauté the onion and garlic until fragrant.
  • Add the bell pepper and carrot, cooking until softened.
  • Pour in the broth and coconut milk, and bring to a simmer.
  • Add the fish, lime juice, and zest, seasoning with salt and pepper.
  • Cook until the fish is opaque and flakes easily, about 5-7 minutes.

Serving

  • Ladle the soup into warm bowls and sprinkle chopped cilantro on top.
  • Serve with a wedge of lime for extra tang, alongside crusty bread or steamed rice.

Notes

For best results, use firm white fish, and cut vegetables evenly. Add lime juice at the end for fresh flavor. Store in an airtight container in the fridge for up to 2 days. Reheat gently on the stove.
