Chocolate Mousse Preparation
In a heatproof bowl, melt the dark chocolate over a pot of simmering water. Stir until smooth. Remove from heat and let cool slightly.
In a mixing bowl, whisk the eggs and granulated sugar until pale and fluffy.
Stir the melted chocolate and vanilla extract into the egg mixture until fully combined.
In another bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the chocolate mixture until no white streaks remain.
Spoon the mousse into serving glasses or bowls and refrigerate for at least 2 hours before serving.
Vanilla Panna Cotta Preparation
Sprinkle gelatin over 3 tablespoons of cold water in a small bowl to bloom.
In a saucepan, combine heavy cream, whole milk, sugar, and salt. Heat over medium heat until sugar dissolves and the mixture is warm but not boiling.
Once warm, remove from heat and stir in the bloomed gelatin until completely dissolved. Add vanilla extract.
Pour the mixture into serving cups or molds and refrigerate for at least 4 hours until set.
Notes
Serve the chocolate mousse chilled, garnished with whipped cream or fresh berries. Vanilla panna cotta can be served in molds or unmolded onto plates, topped with fruits or a berry sauce.
