Instructions

Preparation

  • In a mixing bowl, combine the granulated sugar, cocoa powder, oil, vanilla extract, and eggs. Whisk until the mixture is smooth.
  • In a separate bowl, combine the flour, baking powder, and salt.
  • Add the flour mixture to the cocoa mixture and stir until combined.
  • Cover the dough with plastic wrap and refrigerate for at least 3 hours, or up to overnight.

Baking

  • Preheat the oven to 350°F (175°C).
  • Scoop the dough with a mini ice cream scoop for even portioning, which should yield around 20 cookies.
  • Roll the cookie dough into even-sized balls and generously roll each ball in powdered sugar.
  • Place the cookies on a parchment-lined baking sheet.
  • Bake for 10-12 minutes. The cookies will be soft when they come out but will harden as they cool.
  • Allow the cookies to cool slightly, then move them to a wire rack to cool completely.

Notes

Serve these cookies warm or at room temperature. They pair perfectly with a glass of milk or coffee. Store cookies in an airtight container at room temperature for about a week, or freeze for longer storage.
