Chickpea Salad Sandwich

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 2 tablespoons vegan mayo
  • 1 tablespoon Dijon mustard
  • 1 stalk celery, diced
  • 1/4 cup red onion, diced
  • to taste salt and pepper
  • as needed Bread of choice for sandwich
  • as desired Lettuce or greens optional

Instructions

Preparation

  • In a bowl, mash the chickpeas with a fork until flaky but still a bit chunky.
  • Add the vegan mayo, Dijon mustard, diced celery, and red onion. Mix until combined.
  • Season with salt and pepper to taste.
  • Spread the chickpea mixture onto slices of bread.
  • Add lettuce or greens if desired and top with another slice of bread.
  • Cut in half and serve.

Notes

You can store the chickpea mixture in an airtight container in the refrigerator for up to three days. If you make the sandwich ahead of time, keep the bread separate from the filling to prevent sogginess. Assemble the sandwich just before eating for the best texture. Experiment with spices or herbs to elevate the flavor, and use whole grain bread for added fiber.
