Ingredients

For the Marinade

  • 1 kg Chicken thighs or breasts Use boneless for easier cooking.
  • 2 tsp Cumin
  • 2 tsp Paprika
  • 1 tsp Turmeric
  • 3 cloves Garlic Minced
  • 1 cup Yogurt Plain yogurt works best.
  • 2 tbsp Olive oil
  • 1 tsp Salt
  • 1 tsp Pepper

For Serving

  • 4 pieces Pita bread Warm before serving.
  • 4 cups Rice Use fluffy white or brown rice.
  • 4 cups Salad greens Mix of your favorite greens.

Instructions

Preparation

  • In a bowl, mix the cumin, paprika, turmeric, minced garlic, yogurt, olive oil, salt, and pepper to create a marinade.
  • Add the chicken to the marinade, ensuring it’s well coated. Cover and refrigerate for at least 1 hour, preferably overnight.

Cooking

  • Preheat your oven to 400°F (200°C).
  • Place the marinated chicken on a baking sheet and bake for 25-30 minutes or until cooked through.
  • Allow the chicken to rest, then slice it thinly.

Serving

  • Serve in pita bread with garlic sauce, over rice, or on a bed of salad greens.

Notes

Chicken Shawarma stays good for up to three days in an airtight container in the refrigerator. You can freeze it for extended storage. Use a meat thermometer to ensure the chicken reaches a safe cooking temperature of 165°F (75°C). Experiment with toppings like pickles, onion, or spicy sauces.
