  • 4 pieces Chicken thighs or breasts
  • 2 cups Apples, sliced A mix of sweet and tart apples like Granny Smith and Honeycrisp recommended.
  • 1 cup Onions, sliced
  • 1 cup Apple cider
  • 2 tablespoons Butter
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • 1 teaspoon Thyme
  • to taste Rice or crusty bread For serving.

Cooking

  • In a large skillet, melt butter over medium heat.
  • Add the chicken and cook until browned on both sides.
  • Remove the chicken and set it aside.
  • In the same skillet, add sliced onions and cook until softened.
  • Add chopped apples and cook for a few minutes.
  • Pour in apple cider and return the chicken to the skillet.
  • Sprinkle with thyme, salt, and pepper.
  • Cover and simmer for about 30 minutes, or until the chicken is cooked through.
  • Serve with rice or crusty bread.

Notes

Store any leftovers in an airtight container in the refrigerator for up to three days. For longer storage, freeze and thaw in the refrigerator overnight before reheating. Consider adding a splash of cream for richness or experimenting with herbs like rosemary or parsley.
