Ingredients

For the chicken

  • 2 pieces boneless, skinless chicken breasts Seasoned with salt and pepper
  • 1 cup breadcrumbs Panko breadcrumbs can be used for extra crunch
  • 1/2 cup grated Parmesan cheese For coating the chicken

For the salad

  • 2 cups Romaine lettuce, chopped
  • 1/2 cup Caesar dressing Use your favorite brand or homemade

For the sandwich

  • 4 slices soft bread of your choice Ciabatta or sourdough recommended

Instructions

Preparation

  • Preheat your oven to 400°F (200°C).
  • Season the chicken breasts with salt and pepper.
  • Combine breadcrumbs and grated Parmesan cheese in a bowl.
  • Coat each chicken breast with the breadcrumb mixture, pressing it on well.
  • Place the chicken on a baking sheet lined with parchment paper.
  • Bake for about 20-25 minutes or until the chicken reaches an internal temperature of 165°F (74°C).

Assembly

  • While the chicken is baking, mix chopped Romaine lettuce with Caesar dressing in a bowl.
  • Once the chicken is done, let it cool slightly before slicing.
  • Assemble the sandwich by placing crispy chicken on the bread, adding a scoop of Caesar salad on top, and finishing with another slice of bread.

Notes

Serve warm for the best taste. Pairs well with a fresh side salad or crispy fries. Store leftovers in an airtight container for up to two days, keeping chicken separate from bread and salad.
