For the Chicken Filling

1.5lbschicken breast, thinly sliced
5clovesgarlic, minced
1largesweet onion, thinly sliced
1mediumred bell pepper, julienned
1tspMediterranean herb blend
0.5tspsmoked paprika
a pinchchili flakes (optional)
2cupsfresh spinach leaves

For the Cheese Blend
1.5cupsmozzarella cheese, shredded
0.5cupsharp cheddar cheese, shredded
3tbspcream cheese, softened
2tbspsour cream
2tspfresh chives, chopped
For the Wraps
6largeflour tortillas
1.5tbspmelted butter
0.75tsproasted garlic powder

Instructions
Cooking the Chicken
Heat olive oil in a large skillet over medium-high. Season chicken with salt & pepper, then sear for 3–4 minutes per side until golden and cooked through. Remove and set aside.
Sautéing Veggies & Spices
In the same skillet, cook onions for 2 minutes. Add garlic, spices, and bell pepper. Sauté until softened. Return chicken to the pan and toss in spinach until just wilted.
Making the Cheese Blend
In a bowl, mix ⅔ of mozzarella + cheddar with cream cheese, sour cream, and chives. Reserve the remaining cheese for assembly.
Preparing Tortillas
Mix melted butter with garlic powder and brush one side of each tortilla. Place buttered side down on a clean surface.
Assembling the Wraps
Spread 2 tbsp cheese mixture in the center, top with chicken-vegetable mix, sprinkle extra cheese, and wrap tightly (fold bottom, then sides, then roll).
Grilling to Perfection
Heat a skillet over medium. Cook wraps seam-side down for 2–3 minutes per side until golden and crispy. Cover for the last minute for extra melty cheese.

Slice diagonally, sprinkle extra chives, and serve hot.
