  • 2 cups cherry tomatoes, halved
  • 1 cup fresh mozzarella balls
  • 1/4 cup fresh basil leaves, chopped
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Preparation

  • Preheat your grill to medium-high heat.
  • Season the chicken breasts with olive oil, salt, and pepper.

Cooking

  • Grill the chicken for about 6-7 minutes per side or until they are cooked through (the internal temperature should reach 165°F as per USDA food safety temperature guidelines).
  • While the chicken cooks, mix the halved cherry tomatoes, mozzarella balls, and chopped basil in a bowl. Drizzle with olive oil and add salt and pepper to taste.
  • When the chicken is done, remove it from the grill and let it rest for a few minutes.
  • Top each chicken breast with the tomato and mozzarella mixture. Drizzle with balsamic glaze if desired.
  • Serve immediately and enjoy!

Notes

Serve Caprese Chicken on a bed of mixed greens for a fresh salad, or pair it with grilled vegetables for a complete meal. It can also be stored in an airtight container in the fridge for up to three days.
