Preparation
Preheat your oven to 325°F (163°C).
Prepare the crust by mixing graham cracker crumbs, 1/4 cup of sugar, and melted butter until the mixture resembles wet sand. Press this mixture into a lined baking pan.
Cheesecake Filling
In a separate bowl, beat the cream cheese with 1/2 cup of sugar until smooth.
Add the eggs one at a time, followed by the vanilla extract, mixing well.
Fold in the ricotta cheese and mini chocolate chips until everything is combined.
Baking
Pour the creamy filling over the prepared crust.
Bake for 40-45 minutes until the edges set but the center has a slight jiggle.
Allow it to cool completely at room temperature. Then, refrigerate for at least 4 hours before cutting into bars.
