Ingredients

For the crust

  • 1.5 cups graham cracker crumbs
  • 0.25 cups granulated sugar
  • 6 tbsp unsalted butter, melted

For the filling

  • 1 cup ricotta cheese

Instructions

Preparation

  • Preheat your oven to 325°F (163°C).
  • Prepare the crust by mixing graham cracker crumbs, 1/4 cup of sugar, and melted butter until the mixture resembles wet sand. Press this mixture into a lined baking pan.

Cheesecake Filling

  • In a separate bowl, beat the cream cheese with 1/2 cup of sugar until smooth.
  • Add the eggs one at a time, followed by the vanilla extract, mixing well.
  • Fold in the ricotta cheese and mini chocolate chips until everything is combined.

Baking

  • Pour the creamy filling over the prepared crust.
  • Bake for 40-45 minutes until the edges set but the center has a slight jiggle.
  • Allow it to cool completely at room temperature. Then, refrigerate for at least 4 hours before cutting into bars.
  • Dust the top with powdered sugar right before serving.

Notes

Serve with a dollop of whipped cream or fresh berries, and for extra flair, garnish with chocolate shavings or drizzled chocolate sauce.
