Ingredients

Egg Base

  • 6 large large eggs Use fresh eggs for better flavor.

Filling

  • 1/4 cup mayonnaise Can adjust for creaminess.
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon Cajun seasoning Adjust for spice preference.
  • 1/4 cup cooked shrimp, diced Fresh shrimp preferred.
  • 1 tablespoon green onions, chopped
  • to taste Salt and pepper
  • Paprika for garnish For presentation.

Instructions

Preparation

  • Hard boil the eggs by placing them in a pot of cold water. Bring to a boil and then cover. Remove from heat and let sit for 12 minutes.
  • Transfer eggs to an ice bath to cool, then peel.
  • Slice the eggs in half lengthwise and remove the yolks to a bowl.
  • Mash the yolks with mayonnaise, Dijon mustard, Cajun seasoning, salt, and pepper.
  • Stir in diced shrimp and green onions.
  • Spoon or pipe the mixture back into the egg whites.
  • Garnish with paprika and additional green onions if desired.
  • Serve chilled.

Notes

Store leftover deviled eggs in an airtight container in the fridge for up to 3 days. Keep eggs unassembled until serving for best texture.
