Preparation
Hard boil the eggs by placing them in a pot of cold water. Bring to a boil and then cover. Remove from heat and let sit for 12 minutes.
Transfer eggs to an ice bath to cool, then peel.
Slice the eggs in half lengthwise and remove the yolks to a bowl.
Mash the yolks with mayonnaise, Dijon mustard, Cajun seasoning, salt, and pepper.
Stir in diced shrimp and green onions.
Spoon or pipe the mixture back into the egg whites.
Garnish with paprika and additional green onions if desired.
