  • 1 cup Buffalo sauce
  • 4 large tortillas
  • 1 cup lettuce, shredded
  • 1/2 cup ranch or blue cheese dressing Choose based on personal preference
  • 1 tablespoon olive oil

Instructions

Preparation

  • Preheat the oven to 450°F (230°C).
  • Toss the cauliflower florets with olive oil, Buffalo sauce, salt, and pepper.
  • Spread the cauliflower on a baking sheet and bake for 20-25 minutes, or until crispy.

Assembly

  • Lay a tortilla on a flat surface and spread a layer of ranch or blue cheese dressing.
  • Add a handful of shredded lettuce and a portion of the baked Buffalo cauliflower.
  • Roll up the tortilla tightly, tucking in the sides as you go.
  • Repeat with the remaining tortillas and fillings.
  • Slice in half and serve immediately, or wrap in foil for later.

Notes

For added crispiness, broil the cauliflower for the last few minutes of baking. Customize the sauce to your heat preference.
