Ingredients

  • 1/2 cup all-purpose flour
  • 1/4 cup cornmeal
  • 1/4 cup onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon cayenne pepper (optional) For added spice.
  • 1 large egg
  • Oil for frying Oil Use enough oil to submerge the fritters.

Serving

Preparation

  • In a large bowl, mash the black-eyed peas slightly, leaving some chunks for texture.
  • Add flour, cornmeal, onion, garlic, salt, black pepper, cayenne pepper (if using), and egg. Mix until well combined.

Cooking

  • Heat oil in a deep skillet over medium heat.
  • Drop spoonfuls of the mixture into the hot oil, frying until golden brown and crispy, about 3-4 minutes per side.
  • Remove from oil and drain on paper towels.

Notes

Let fritters cool completely before storing in an airtight container. Store in the refrigerator for up to 3 days. Reheat in an oven or air fryer to regain crispiness. Ensure the oil is hot enough for proper frying. Adjust the batter thickness if necessary, and feel free to experiment with spices.
