Instructions

Preparation

  • In a large pot, heat olive oil over medium heat.
  • Add chopped onion and garlic; sauté until softened.
  • Stir in the sliced sausage and cook until browned.
  • Add paprika, cumin, salt, and pepper; mix well.
  • Pour in the broth and bring to a boil.
  • Stir in the rice and black beans, reduce heat to low, cover, and simmer for about 20 minutes, or until rice is cooked.
  • Fluff with a fork, and serve with optional toppings like cilantro and lime.

Notes

For a healthier option, use turkey or chicken sausage. Experiment with spices! You can also use homemade chicken broth for added flavor. Store leftovers in an airtight container in the refrigerator for up to 3-4 days or freeze for up to 3 months.
