Instructions

Preparation

  • Preheat your oven to 350°F (175°C) and grease a 9×9-inch square baking pan or line it with parchment paper.
  • In a medium-sized saucepan, melt the unsalted butter and Biscoff cookie butter over low heat until smooth and fully combined.
  • Remove from heat and let the mixture cool slightly, about 5 minutes.
  • Add the brown sugar to the butter mixture and whisk until smooth.
  • Whisk in the two large eggs until fully incorporated.
  • Stir in the vanilla extract.
  • In a separate large bowl, sift together the all-purpose flour, baking powder, and salt.
  • Gradually fold the sifted dry ingredients into the wet mixture, stirring gently to avoid overmixing.
  • Once combined, fold in the white chocolate chips and crushed Biscoff cookies.
  • Pour the blondie batter into the prepared baking pan and spread it evenly.

Baking

  • Bake for 25 to 30 minutes, checking for doneness with a toothpick.
  • Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely.
  • Once cooled, cut into squares and serve.
