Ingredients

Spices

  • 2 cups Dried chiles (e.g., guajillo, ancho) Toasted before blending.
  • 2 teaspoons Cumin
  • 4 whole Cloves
  • 2 teaspoons Oregano
  • 1 tablespoon Garlic powder
  • 1 tablespoon Onion powder
  • 1 teaspoon Salt Adjust according to taste.
  • 1 teaspoon Black pepper

Instructions

Preparation

  • Toast the dried chiles in a dry skillet over medium heat for a few minutes until fragrant.
  • Remove stems and seeds from the chiles.
  • In a spice grinder or blender, combine the toasted chiles with cumin, cloves, oregano, garlic powder, onion powder, salt, and black pepper.
  • Blend until a fine powder is achieved.
  • Store the seasoning in an airtight container until ready to use.
