  • 2 cups cooked shredded chicken Rotisserie chicken can be a convenient option.
  • 1 cup BBQ sauce Feel free to use different sauces like teriyaki or buffalo for variation.
  • 1 cup shredded cheese (cheddar or your choice) Pepper jack can add a bit of heat.
  • 1/2 cup green onions, chopped For garnish.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Wash and pierce sweet potatoes with a fork, then rub with olive oil and season with salt and pepper.
  • Bake sweet potatoes for 45-60 minutes until tender.

Assembly

  • In a bowl, mix the shredded chicken with BBQ sauce.
  • Once sweet potatoes are done, slice them open and fluff the insides with a fork.
  • Stuff each sweet potato with the BBQ chicken mixture.
  • Top with shredded cheese and return to the oven for 5-10 minutes until cheese is melted.
  • Garnish with chopped green onions before serving.

Notes
