  • 2 cups cooked rice Use leftover rice that has been chilled for best texture.
  • 1 lb chicken breast, diced
  • 2 pieces eggs, beaten
  • 1 cup mixed vegetables (carrots, peas, bell pepper) Feel free to customize with other vegetables.
  • 3 tablespoons bang bang sauce (mayonnaise, sriracha, honey) Adjust based on spice preference.
  • 2 tablespoons soy sauce
  • 2 tablespoons vegetable oil For cooking.
  • to taste Salt and pepper
  • to garnish Green onions Chopped, for serving.

Instructions

Cooking

  • Heat vegetable oil in a large skillet over medium heat.
  • Add the diced chicken and cook until browned and cooked through.
  • Push the chicken to the side and add the beaten eggs, scrambling them until fully cooked.
  • Stir in the mixed vegetables and cook until heated through.
  • Add the cooked rice to the skillet.
  • Pour in the bang bang sauce and soy sauce, mixing everything until well combined.
  • Season with salt and pepper to taste.
  • Garnish with chopped green onions before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or on the stove. Avoid leaving it at room temperature for more than two hours.
