Instructions
Cooking the Rice
Cook your rice according to the package instructions. Set aside once ready.
Preparing the Chicken
Cut the chicken breast into bite-sized pieces and season with salt and pepper.
In a large skillet, heat olive oil over medium-high heat.
Add the chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes.
Making the Sauce
In a small bowl, mix together mayonnaise, sriracha, honey, garlic powder, and lime juice.
Taste and adjust the sriracha or honey as preferred.
Finishing the Dish
Once the chicken is cooked, toss in the mixed veggies and cook for an additional 2-3 minutes until just tender.
Remove the skillet from heat, pour the sauce over the chicken and veggies, stirring to coat evenly.
Serve over rice and garnish with extra sriracha or chopped green onions if desired.
Notes
Store leftover Bang Bang Chicken in an airtight container in the fridge for 3-4 days. Reheat in the microwave or stovetop. For added crunch, consider adding crushed peanuts on top. You can also substitute chicken with tofu or shrimp.
