Bang Bang Chicken Bowl

A quick and customizable dish combining tender chicken, colorful veggies, and a creamy, spicy sauce served over rice.

Ingredients

Main ingredients

  • 1 lb boneless, skinless chicken breast Cut into bite-sized pieces
  • 1 cup cooked rice (white, brown, or cauliflower) Follow package instructions for cooking
  • 1 cup mixed veggies (broccoli, bell peppers, carrots) Fresh vegetables recommended
  • 2 tablespoons olive oil For sautéing the chicken
  • Salt and pepper to taste Season the chicken generously

For the sauce

  • 1/2 cup mayonnaise Base of the sauce
  • 2 tablespoons sriracha Adjust to taste for spice
  • 1 tablespoon honey For sweetness
  • 1 teaspoon garlic powder Adds flavor to the sauce
  • 1 teaspoon lime juice For acidity

Instructions

Cooking the Rice

  • Cook your rice according to the package instructions. Set aside once ready.

Preparing the Chicken

  • Cut the chicken breast into bite-sized pieces and season with salt and pepper.
  • In a large skillet, heat olive oil over medium-high heat.
  • Add the chicken pieces and sauté until golden brown and cooked through, about 6-8 minutes.

Making the Sauce

  • In a small bowl, mix together mayonnaise, sriracha, honey, garlic powder, and lime juice.
  • Taste and adjust the sriracha or honey as preferred.

Finishing the Dish

  • Once the chicken is cooked, toss in the mixed veggies and cook for an additional 2-3 minutes until just tender.
  • Remove the skillet from heat, pour the sauce over the chicken and veggies, stirring to coat evenly.
  • Serve over rice and garnish with extra sriracha or chopped green onions if desired.

Notes

Store leftover Bang Bang Chicken in an airtight container in the fridge for 3-4 days. Reheat in the microwave or stovetop. For added crunch, consider adding crushed peanuts on top. You can also substitute chicken with tofu or shrimp.
