  • 1 cup cherry tomatoes, halved
  • 1 medium red bell pepper, diced
  • 2 cups fresh spinach
  • 4 large eggs Ensure eggs are at room temperature.
  • 2 tablespoons olive oil
  • Salt, to taste Adjust according to preference.
  • Pepper, to taste Adjust according to preference.

Instructions

Preparation

  • Preheat the oven to 375°F (190°C).
  • In a baking dish or ramekins, add the cherry tomatoes, diced red bell pepper, and fresh spinach.
  • Crumble the feta cheese on top of the vegetables.
  • Crack the eggs over the feta and vegetables, ensuring not to break the yolks.
  • Drizzle with olive oil and season with salt and pepper.

Cooking

  • Bake in the preheated oven for about 20-25 minutes or until the eggs are set.

Serving

  • Serve hot, garnished with fresh herbs if desired.

Notes

To store leftovers, allow to cool and transfer to an airtight container. Can be kept in the refrigerator for up to three days. Reheat in the oven or microwave before serving.
