  • 1 lb smoked sausage, sliced You can use fresh sausage; ensure it's cooked thoroughly.
  • 8 oz bow tie pasta Cook according to package instructions.
  • 2 cups Brussels sprouts, halved Cut into uniform sizes for even roasting.
  • 2 cups butternut squash, cubed Cut into uniform sizes for even roasting.
  • 3 tablespoons butter Use for sautéing.
  • 4 cloves garlic, minced For flavor.
  • Salt and pepper to taste
  • Parmesan cheese, for serving Sprinkle generously on top.

Instructions

Preparation

  • Preheat the oven to 400°F (200°C).
  • Toss Brussels sprouts and butternut squash with olive oil, salt, and pepper. Spread on a baking sheet and roast for 25-30 minutes until tender.

Cooking

  • Meanwhile, cook bow tie pasta according to package instructions. Drain and set aside.
  • In a large skillet, melt butter over medium heat. Add sliced sausage and garlic, cooking until the sausage is browned and garlic is fragrant.
  • Add roasted vegetables and cooked pasta to the skillet, tossing to combine. Adjust seasoning as needed.

Serving

  • Serve warm, garnished with Parmesan cheese.

Notes

Store leftovers in an airtight container in the refrigerator for up to three days. Reheat in the microwave or on the stove, adding a splash of water to prevent drying out. For variety, try using different sausage types or seasonal vegetables.
