Ingredients

Salad Base

  • 4 cups mixed greens (spinach, arugula, or spring mix)
  • 2 pieces crisp apples (Honeycrisp or Granny Smith), thinly sliced
  • ½ cup dried cranberries (or fresh cranberries, halved)
  • ½ cup pecans, lightly toasted Toast for enhanced flavor
  • ¼ cup crumbled feta or goat cheese Optional topping

Dressing

  • 3 tbsp olive oil
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey or maple syrup
  • 1 tsp Dijon mustard

Instructions

Preparation

  • Wash and dry the mixed greens thoroughly. Place them in a large mixing bowl.
  • Thinly slice the apples and toss them lightly with lemon juice to prevent browning.
  • Toast the pecans in a dry skillet over medium heat for about 3–5 minutes until fragrant.

Assembly

  • Add the sliced apples, cranberries, and toasted pecans to the bowl of greens.
  • Whisk together the dressing ingredients in a separate bowl until emulsified.
  • Drizzle the dressing over the salad just before serving.
  • Garnish with crumbled feta or goat cheese if desired.

Notes

Store leftover salad in an airtight container for up to 2 days but keep dressing separate until serving.
