2tablespoonsapple butter
4ouncesBrie cheese, rind trimmed and slicedChoose a good quality Brie for the best flavor.
1smallapple, thinly sliced (Granny Smith or Honeycrisp)
1teaspoonfresh thyme leaves

Preparation
Heat a large skillet or griddle over medium heat.
Spread a thin layer of softened butter on one side of each slice of sourdough bread.
On the unbuttered sides of two bread slices, evenly distribute 1 tablespoon of apple butter each.
Lay slices of Brie cheese evenly over the apple butter. Add thin apple slices and thyme leaves if you like.
Place the remaining bread slices on top, buttered sides facing outward.
Transfer the sandwiches to the skillet. Cook for 3 to 4 minutes per side, pressing gently with a spatula, until the bread is golden and the cheese melts.
Remove the grilled sandwiches from heat, slice each in half, and serve immediately.
Notes
Serve hot and crispy, optionally with a sprinkle of sea salt on the apple slices. Store leftovers in an airtight container for up to two days.
