Instructions

Preparation

  • Start by mincing the garlic clove into a fine paste using a knife or a mortar and pestle.
  • In a mixing bowl, combine the garlic paste, kosher salt, Dijon mustard, and lemon juice. Whisk these ingredients together until well blended.
  • Slowly pour in the olive oil while whisking to emulsify the mixture and create the vinaigrette texture. Taste it and adjust with more salt, lemon juice, or mustard, according to your liking.
  • Transfer the vinaigrette to an airtight container and store it in the refrigerator for up to a week.

Notes

Feel free to add fresh herbs like basil or parsley for extra flavor. You can vary the mustard type for different taste profiles. Adjust the garlic amount based on preference; roasted garlic can also be a great alternative.
