Preparation
Preheat the oven to 350°F (175°C).
In a large skillet, cook the ground beef and chopped onion over medium heat until the meat is no longer pink; drain the fat.
Add sliced mushrooms, beef broth, milk, frozen mixed vegetables, salt, and black pepper. Stir the mixture and bring it to a simmer.
Baking
Transfer the beef mixture to a greased baking dish.
Spread the mashed potatoes evenly over the top.
Bake for 25-30 minutes or until the edges are bubbly.
If using cheese, sprinkle it on top and return the dish to the oven for another 5 minutes until melted.
