Main Ingredients

  • 1 pound ground beef Use lean ground beef for a healthier option.
  • 1 onion, chopped
  • 2 cups sliced mushrooms
  • 1 cup beef broth Can be substituted with vegetable broth for vegetarian option.
  • 1 cup milk
  • 3 cups frozen mixed vegetables Can substitute with fresh vegetables, cooked until soft.
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups mashed potatoes Spread to edges to prevent drying out.
  • 1 cup shredded cheese (optional) Add during the last 5 minutes of baking for a cheesy topping.

Instructions

Preparation

  • Preheat the oven to 350°F (175°C).
  • In a large skillet, cook the ground beef and chopped onion over medium heat until the meat is no longer pink; drain the fat.
  • Add sliced mushrooms, beef broth, milk, frozen mixed vegetables, salt, and black pepper. Stir the mixture and bring it to a simmer.

Baking

  • Transfer the beef mixture to a greased baking dish.
  • Spread the mashed potatoes evenly over the top.
  • Bake for 25-30 minutes or until the edges are bubbly.
  • If using cheese, sprinkle it on top and return the dish to the oven for another 5 minutes until melted.

Serving

  • Let it cool for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Freeze for up to 3 months. Reheat in the oven at 350°F or microwave individual portions.
